THE CITY OF COMMERCIAL KITCHEN <br />�E���r�, CLEANING SPECIFICATION <br />-.. ::::::: -C.f' r �:: CONT. <br />L� �S�4NTON© <br />FAUCETS /SINKS <br />• All faucets, hose bibs, or other similar devices shall be cleaned, polished and free <br />from any streaking or finger prints. <br />• All sinks shall be scrubbed to remove any materials or stains. <br />• All chrome drains shall be cleaned and polished. <br />FLOORS <br />• Floors shall be mopped with and scrubbed (if needed) to thoroughly clean and <br />sanitize all areas. <br />• Floors shall have all excess water removed at end of service. <br />DISHWASHER <br />• Thoroughly clean and sanitize the exterior of the dishwasher. <br />• All stainless steel surfaces shall be cleaned with approved materials to remove scale <br />and lime build-up. <br />• Filter basket at dishwasher discharge and floor sink shall be emptied and cleaned. <br />Page � 53 <br />
