COMMERCIAL KITCHEN CLEANING SPECIFICATION <br /> SCOPE <br /> To provide a clean and healthy environment for the preparation of food by sanitizing all surfaces <br /> and equipment in the Commercial Kitchen.The frequency will be monthly. <br /> GENERAL <br /> ✓ All wall tile,FRP,or stainless steel wall surfaces shall be washed with approved chemical <br /> treatment and thoroughly rinsed. All surfaces shall be free from streaks when service is <br /> complete. <br /> ✓ All counter tops shall be thoroughly cleaned and sanitized with approved materials. <br /> Counters shall be free from streaks when service is complete. <br /> ✓ The interior and exterior of all equipment shall be thoroughly cleaned and sanitized with <br /> approved products. <br /> ✓ All door leading into and out of the kitchen will be cleaned to remove fingerprints, <br /> smudges,or any other markings. <br /> COMMERCIAL RANGE <br /> ✓ The commercial range has standing pilots, so care must be taken when using <br /> products on the unit. <br /> ✓ Burner rings shall be removed and all grease,crumbs,spills,or other debris removed. <br /> ✓ Crumb tray shall be removed and degreased. <br /> ✓ Interior of ovens including doors shall be thoroughly cleaned to remove any burned on <br /> materials. <br /> ✓ Grill top shall be scraped and cleaned with approved materials. <br /> ✓ Legs shall be cleaned and degreased. <br /> ✓ Entire interior and exterior shall be free from streaks when service is complete. <br /> ✓ The exterior of the stainless steel hood shall be wiped down to remove any grease or <br /> fingerprints. <br /> REFRIGERATOR/FREEZER <br /> ✓ Entire exterior shall be thoroughly cleaned with approved materials. <br /> ✓ Air intake grills shall be cleaned to allow for free air flow. <br /> ✓ Legs and supports shall be degreased and cleaned. <br /> ✓ All surfaces shall be left with no fingerprints or streaks when service is complete. <br /> FLOOR SINKS <br /> ✓ Each floor sink shall be thoroughly cleaned to prevent back-up of water when used. <br /> ✓ Area around floor sink shall be cleaned and free from any debris. <br /> ✓ Any standing water will be removed at end of service. <br /> Page 16 of 53 <br />
